Grilled
Angel Cake with Berries & Cream
(serves 6)
Ingredients
2 cups fresh strawberries, cut into quarters
1 cup fresh blueberries
3 tablespoons brown sugar
1/2 cup whipping cream
1 teaspoon vanilla
1 store bought angel food cake, cut into 6 wedges
Directions
In a bowl, add strawberries, blueberries and 1 tablespoon of brown
sugar; stir so that all of the berries are coated with sugar.
Set aside.
In a chilled bowl, beat
whipping cream and vanilla into soft peaks. Gradually add the
remaining brown sugar and beat until stiff peaks have formed.
Cover and refrigerate.
Place angel food cake
onto a grill at medium heat and cook about 1 minute or until golden
brown on both sides.
Serve the grilled angel
cake with a spoonful of berries and a dollop of whipped cream.
*Berries and whipped
cream can be made ahead of time.
