Banana Cake With Brown Butter Frosting
(serves 24)

Ingredients
1 1/3 cups mashed very ripe bananas
1 tablespoon fresh lemon juice
2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon ground cinnamon
3/4 cup packed brown sugar
1/2 cup sugar
1/2 cup butter, softened
2 large eggs

Directions
Preheat oven to 350 degrees.

Grease and flour a 13x9 baking pan; set aside.

In a small bowl, combine bananas, lemon juice, and vanilla. In another small bowl, combine flour, baking powder, baking soda, salt, and cinnamon.

In a large bowl, add brown sugar, sugar and butter; beat on medium speed until light and creamy. Add 1 egg at a time; beat well after each one. On low speed, alternately add the flour mixture and the banana mixture; start with flour and end with flour. Beat batter just until smooth.

Spoon batter into prepared pan and bake for 25 to 30 minutes or until toothpick comes out clean. Cool cake in wire rack.
