Vegetable Frittata

Ingredients
2 tablespoons olive oil (more if needed)
2/3 cup chopped onion
1/2 cup chopped zucchini
1/2 cup chopped tomato
4 ounces grated cheddar cheese
1 cup diced eggplant
1/3 cup light cream
1/2 cup diced bread
8 ounces cream cheese, diced
salt and pepper to taste

Directions
Preheat oven to 350 degrees.

Cook all vegetables in oil for 10 to 15 minutes in a large oven proof skillet. Beat eggs; add cream cheese and seasoning. Add egg mixture to the vegetables along with the bread, cheddar cheese and cream cheese. Bake for 30 to 35 minutes. Turn out on to a platter and serve.
