Pumpkin Pancakes
(makes 16 pancakes)

Ingredients
2 cups flour
2 tablespoon granulated sugar
4 baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups milk
1 cup pumpkin puree
4 eggs, separated
1/4 cups melted butter

Directions
Sift together dry ingredients. Combine milk, eggs, butter and pumpkin puree. Stir into dry ingredients until just blended. Pour onto hot, oiled griddle, about 1/3 cup at a time. Cook until tops bubble. Turn and cook other side.
