Cheesy Ham
& Egg Bake
Ingredients
1/4
cup butter
2 cups frozen hash browns
1/4 cup onion, chopped finely
6 eggs, beaten
2 tablespoons milk
1/4 cup parsley, chopped
1 cup Soft Fontina cheese, shredded
1 cup cooked ham, cubed
salt and pepper to taste
Directions
Preheat
oven to 350 degrees.
Melt
butter in a 10-inch ovenproof skillet. Add hash browns and onions;
cook covered over medium heat for 5 minutes or till tender and
light brown. In a bow,l beat eggs; add milk, 3 tablespoons parsley,
1/2 of the cheese, salt and pepper. Pour egg mixture over potatoes.
Sprinkle cubed ham over eggs. Bake uncovered for 20 minutes or
till eggs are set. Sprinkle remaining cheese over eggs and return
to the oven for about 2 minutes, till cheese has melted. Remove
the pan from the oven and garnish with remaining parsley. Cut
into wedges and serve.
