Directions
In a large bowl, whisk together flour, sugar, baking powder
and salt; set aside. Beat egg lightly; whisk in milk and
oil.
Add milk mixture gradually
to flour; whisk until dry ingredients are moistened and
only a few lumps remain. Lightly grease griddle with oil
or butter; heat griddle over medium heat. Spoon 1/4 cup
of batter on to hot griddle; cook until batter bubbles on
the surface and the underside is golden brown. Flip pancakes
and brown on other side.
