Lemon
Crunch Muffins
(makes12)
Ingredients
2 cups self-raising flour
3/4 cup sugar
75g butter
1 cup milk
1 egg
grated rind of 2 lemons
Topping
1/4 cup lemon juice
1/4 cup sugar
Directions
In a bowl, mix the flour and sugar. Melt the butter and
in a separate bowl, combine with the milk, egg and lemon
rind. Beat well. Add the liquid mixture to the dry ingredients
and fold in. (Do not THOROUGHLY mix in, just mix until the
dry ingredients are lightly dampened.)
Lightly grease a 12 medium-sized
cup muffin pan and spoon the mixture evenly into the prepared
pan. Bake at 400 degrees for 10 minutes. \While the muffins
are in the oven, stir together the 1/4 cup of lemon juice
and 1/4 cup of sugar.
Drizzle this lemon/sugar mixture
over the hot muffins as soon as they are removed from the
oven. Leave the muffins to stand in the pans just for a
few minutes removing before the syrup drizzled on top hardens
as it cools and causes the muffins to stick to the pans!
