Dana's Pumpkin
Bread
(makes one loaf)
Ingredients
1 2/3 cup flour
1 1/2 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
3/4 salt
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1/2 cup vegetable oil
1/2 cup orange juice
1 1/4 cups fresh or canned pumpkin
2 eggs lightly beaten
Directions
Preheat oven to
350 degrees.
Sift together flour,
sugar, baking powder, baking soda, salt, nutmeg, cloves, cinnamon,
and allspice. In a large bowl, combine oil, orange juice, pumpkin,
and eggs; mix well. Add dry sifted ingredients, blending thoroughly.
Pour batter into greased loaf pan and bake for 60 to 65 minutes
or until tester comes out clean. Cool for 15 minutes; remove from
pan and place on wire rack to glaze.
Glaze
Ingredients
1/4 cup powdered
sugar
2 teaspoons warm water
1/2 teaspoon lemon juice
Directions
Combine all ingredients
and whisk until smooth; pour over bread.
