Cinnamon
Muffins
(makes 8 to 10 muffins)
Ingredients
1/3 cup shortening
1/2 cup sugar
1 egg
1 1/2 cup cake flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 cup milk
1/2 cup sugar
1 teaspoon cinnamon
1/2 cup melted butter
Directions
Preheat oven to 325 degrees.
Cream first 3 ingredients. Combine
dry ingredients and add to creamed mixture alternately with milk;
mix well. Fill greased muffin pans 2/3 full. Bake for 20-25 min.
or until golden. Let cool 3-4 min. While the muffins are cooling,
combine sugar and cinnamon. Roll muffins in melted butter and
then in cinnamon sugar mixture. (Try not to get any of the cinnamon
mixture on the bottom of the muffins.)
