Chocolate
Zucchini Bread
(makes 2 loaves)
Ingredients
2 1/2 cups flour
1/2 cup cocoa
2 1/2 teaspoons baking powder
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
2 cups sugar
1 cup oil
3 eggs
2 cups grated zucchini
1 teaspoon vanilla
1/2 cup milk
1 cup chopped walnuts
Directions
Preheat oven to 350 degrees.
In a bowl, combine
flour, cocoa, baking powder, baking soda, salt and cinnamon.
In large bowl, add oil, sugar, eggs, vanilla, milk, and
walnuts; with an electric mixer beat on low until combined.
Add dry ingredients to the moist ingredients until combined.
Stir in zucchini. Don't over mix.
Pour batter into
well greased and floured 8.5x4.5x2.75 loaf pans. Bake for
1 hour or until tester comes out clean.
