Tollhouse Watermelon Rind

Ingredients
1 medium watermelon
7 cups sugar
1 pint white vinegar
1/2 teaspoon oil of clove
1/2 teaspoon oil of cinnamon

Directions
Pare and cube watermelon rind. Boil rind in salt and water (1/2 cup salt to 8 cups water) until the rind is fork tender. Make syrup of sugar, vinegar and oils and bring to a boil. Pour over rind; let stand for 24 hours. Repeat twice; letting stand for 24 hours after each time. Heat syrup and rind together. Seal into jars.
