Ingredients
1 1/2 cups yellow cornmeal
1/2 cup flour
2 tablespoons sugar
3 tablespoons baking powder
1/4 teaspoon salt
1/8 teaspoon black pepper
2 eggs, beaten
1/2 cup minces onion
1 cup milk
Corn oil for frying
Directions
Combine dry ingredients; mix well.
Add eggs, onion, and milk. Stir to make a stiff batter. Heat corn
oil in a deep heavy pot. Drop batter by tablespoons into the hot
oil- not less than 4 inches deep. Fry until golden brown, about
2 minutes. Drain on a paper towel.
